it helps if the crust comes all the way up the sides of the pan. chill the cheesecake and remove it from the pan while it's cold. and i usually slide an offset spatula around the edges of the cheesecake before releasing it!
put the cheesecake on the middle rack and then put a second pan (any kind of pan) on the bottom rack and fill it with water. sorry that was worded weird - i didn't have enough time on the clip to explain lol

Frankly, I was wondering how it gets so solid without adding flour or starch. If I don't add it, I'm afraid it will remain liquid. Thank you, the recipe looks very delicious.
the eggs in the cheesecake give it structure and i'm not sure about your cream cheese but ours is quite firm when cold so it will always firm up after baking/cooling!
